There are stylish bars, bistros and restaurants a plenty that can easily stand alongside the best in the world. Aside from that, the number of pubs is almost limitless, Rose Street alone has over twenty which should challenge the most resilient of livers. So whether you want to dine with a view of the castle or simply soak up the ambience of pubs that have stood for centuries, you'll be spoilt for choice.PubsEdinburgh has more bars per square mile than any other European city. That may just be the drink talking, but the city does boast an inordinate amount of watering holes, from centuries-old pubs brimming with history, to the latest in contemporary chic. There's a bar for everyone in this town. And if that weren't enough, the city is blessed with liberal licensing laws, which are relaxed even further during the Festival in August and over Christmas and New Year. It is not a problem finding bars open till past midnight any night of the week and some are open till 0300 at weekends. Edinburgh may not be quite the city that never sleeps, but it's doing pretty well in the insomnia stakes. A good area for bars is around the Grassmarket, in the Old Town, which gets very lively at weekends and is particularly popular with students, as are the bars in the Southside, near the University. There are also lots of bars around the Tollcross. Those looking for more hip and happening places should head for the cluster of cool bars around Broughton Street, at the east end of the New Town. An area with a diverse mix of drinking holes is Leith. Here you'll find everything from the roughest spit-and-sawdust joints to the trendiest waterside warehouse conversions. Edinburgh's most famous drinking street is Rose Street, a narrow pedestrianised lane between Princes Street and George Street, and more recently George Street is home to such bars as The Dome, The Standing Order, Bar 38 and Au Bar One and many more. RestaurantsIn keeping with its growing reputation as one of the great European cities, Edinburgh's restaurant scene has undergone something of a transformation in recent years and the capital now boasts a wide range of places, to suit all tastes and budgets. The culinary scene has a distinctly cosmopolitan feel, with a large number of Italian, French, Mexican, Spanish, Indian, Thai and Chinese restaurants. There are also a growing number of eateries offering fusion cooking, which combines a range of international flavours. Scottish cuisine is also well represented, from traditional fare to more contemporary eclectic cuisine using various international influences, but all using the very best of Scottish ingredients such as game and seafood. Fish and seafood lovers will not be disappointed and should head down to Leith, with its many stylish restaurants and bistros located around the refurbished dockside. Vegetarians are also well catered for, with a selection of good, economical places, particularly around the University. This is where you'll find the best-value eating in town, though the more tourist-oriented restaurants in the Old and New Towns offer good value two-course set menus at lunch-time. If you eat well at lunch and restrict yourself to a snack or light supper in the evening, then dining out in Edinburgh need not be expensive.
